NATURALLY LOW GLYCEMIC INDEX

Dates have a low Glycemic Index (GI) of 42. The International Table of Glycemic Index updated the dates GI values in the scientific journal article 2008 Diabetes Care (Atkinson). The glycemic index clinical trials were conducted on both healthy individuals and diabetics. The table below shows dates in comparison to other fruits.

Breads and muffins using dates have a lower glycemic index than plain wheat bread with no fruit. Adding dates paste to baked good recipes is a good way to reducing the glycemic index.
